A new favorite dinner recipe, from our kitchen to yours
SAUCE INGREDIENTS
2 Tablespoons oil
1 lb shrimp
Salt and pepper
3 Tablespoons butter
3 cloves of minced garlic
1 1/2 cup cherry tomatoes
3 cups spinach
1/2 cup heavy cream
1/4 cup grated Parmesan
1/4 cup sliced basil
Lemon juice
INSTRUCTIONS
In a pan over med-high, heat oil. Add salted and peppered Shrimp + cook for 2 minutes. Flip + cook fully. Remove from pan
Reduce heat to medium, add butter. Once butter is melted add garlic (1 minute) + tomatoes and season with salt + pepper and cook unti tomatoes burst. Add spinach + wilt
Stir in cream, parmesan + basil and bring to simmer, turn heat to low + simmer 3 minutes
Return shrimp to pan + drizzle lemon juice
Cook tortellini pasta according to package instructions, drain and top with sauce
