Tuscan Shrimp Tortellini

A new favorite dinner recipe, from our kitchen to yours



SAUCE INGREDIENTS


  • 2 Tablespoons oil

  • 1 lb shrimp

  • Salt and pepper

  • 3 Tablespoons butter

  • 3 cloves of minced garlic

  • 1 1/2 cup cherry tomatoes

  • 3 cups spinach

  • 1/2 cup heavy cream

  • 1/4 cup grated Parmesan

  • 1/4 cup sliced basil

  • Lemon juice


INSTRUCTIONS


  1. In a pan over med-high, heat oil. Add salted and peppered Shrimp + cook for 2 minutes. Flip + cook fully. Remove from pan

  2. Reduce heat to medium, add butter. Once butter is melted add garlic (1 minute) + tomatoes and season with salt + pepper and cook unti tomatoes burst. Add spinach + wilt

  3. Stir in cream, parmesan + basil and bring to simmer, turn heat to low + simmer 3 minutes

  4. Return shrimp to pan + drizzle lemon juice

  5. Cook tortellini pasta according to package instructions, drain and top with sauce
