We were in a rut and I had finally had enough. I didn't want to go out and spend a fortune on a fancy dinner, but it was a Wednesday evening and I wanted to surprise Chris with a romantic evening at home. I scoured the internet and found this simple recipe for Pasta Carbonara, we had all the ingredients on hand and it remains our go-to romantic at-home dinner date night meal.
INGREDIENTS
12 oz bacon
1 Tablespoon salt
1 lb spaghetti
5 egg yolks
1 whole egg
4 oz Romano Cheese (2 cups)

INSTRUCTIONS
Cook up the bacon and chop up, set to the side
Add salt and 10 cups of water to a large pot to boil
Once boiling, add your pasta to the water
Reserve 1 cup of pasta water for later
To a large bowl add: 5 egg yolks, 1 whole egg and Romano cheese. Whisk until combined
Slowly incorporate small portions of pasta to the bowl and mix together well.
Once all of the pasta is mixed into your sauce add the chopped bacon and your pasta water 1/4 cup at a time until you reach your desired consistency. (The less water you use, the thicker and dryer the sauce will be).
Serve with 2 glasses of red wine, with a candle lit table for the perfect surprise for your loved one!
