Indulge in a Scrumptious Delight with these Banana Chocolate Chip Muffins

Craving something sweet? Want an excuse to make a delicious treat, breakfast or to-go snack? Give this delicious Banana Chocolate Chip Muffin recipe a try:




INGREDIENTS:


  • 1 1/2 cup all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 2/3 cup Monkfruit sweetener (Or sugar)

  • 1 cup semi-sweet chocolate chips

  • 3 mashed and ripe bananas

  • 1 teaspoon vanilla extract

  • 1/3 cup melted (and slightly cooled) butter

  • 1 large egg


INSTRUCTIONS:


  1. Preheat oven to 375F and grease a silicone muffin tin

  2. Combine flour, baking soda, salt and sweetener in a medium bowl, whisk together and set aside

  3. In a large bowl add bananas, egg, melted butter and vanilla, mix together with a hand mixer until combined

  4. Add the dry ingredients (about 1/4 at a time) into the wet mixture, folding until completely combined after each addition. Add in chocolate chips and fold into batter until combined.

  5. Pour the batter into the greased (or paper lined) muffin tin

  6. Bake at 375F for 17-20 minutes until toothpick is inserted and comes out clean.
