How to Make Creamy Cauliflower Bacon Mash in 30 Minutes or Less

No, cauliflower cannot replace a potato, but that doesn't mean there can't be delicious recipes that take a vegetable like cauliflower to a whole new delicious level!


Whenever I make this creamy, cheesy, bacon filled cauliflower dish, no one really wants to go towards the mashed potatoes anyway.



Here is the Cauliflower Mash recipe, best served at the holidays but we love to see it make an appearance as a side with dinner any day of the year:


Servings (6) Cook Time (30 min) Prep Time (15 min)


  • 2lb riced cauliflower (frozen or fresh)

  • 8 oz cream cheese, softened

  • 1/2 c. sour cream

  • 1 1/2 c. shredded cheddar

  • 1 1/2 c. shredded Monterey jack

  • 1/2 tsp. garlic powder

  • 1/2 tsp. onion powder

  • 1 ranch seasoning packet

  • 6 slices cooked bacon, chopped

  • 1/4 c. fresh chives (or green onion) (reserve 1-2 tablespoons for the top)

  • salt and pepper to taste


  1. Steam fresh cauliflower until fork tender (about 10 minutes) OR if using frozen cauliflower rice heat according to package instructions

  2. Preheat oven to 425 degrees Fahrenheit. Grease a 9x13 baking dish

  3. In a large bowl combine cream cheese, sour cream, cheddar, Monterey, ranch packet, garlic powder and onion powder. Mix until smooth. Gently stir in cauliflower, 1/2 of the bacon and the chives. Season with salt and pepper to taste

  4. Spoon into casserole dish and top with remaining bacon. Bake uncovered for 20-25 minutes or until cheese is melted through.

  5. Top with remaining chives and serve!
