I have 3 pizza recipes to celebrate National Pizza Day this year! The first is a delicious breakfast pizza. The 2nd is one I grew up with as an easy and simple meal. The other is one of mine and Chris' favorites; high in protein, very filling and zero carbs!
Start the Day; Puff Pastry Breakfast Pizza
•2 thawed puff pastry sheets
•8 slices of bacon
•1 egg + 1 teaspoon water ( egg wash)
•6 oz shredded cheddar cheese (I used sharp cheddar)
•6 large eggs (cracked in a bowl)
•Pepper to taste
•Chives to top
Preheat oven to 425 degrees Fahrenheit.
Cook up bacon and chop into bite sized pieces (or chop before cooking)
Lay pastry sheets onto a baking sheet lined with silicone baking mat or parchment paper and fold down the sides to make a crust. Brush egg wash onto the pastry.
Sprinkle cheese, cooked bacon and pour cracked (unscrambled) eggs on top of pastry. Sprinkle pepper on top.
Bake for 20-25 minutes. Top it with chives or green onion.

Simple + Small; English Muffin Pizzas
1 Package of English muffins
Pizza Sauce
Mozzarella
Pizza toppings of choice
It's really so easy! Set your oven to 350 degrees F Cut open your English muffins and set them on a baking sheet with their insides facing up. Spread your sauce over each muffin and then top with cheese and any other toppings you or your family likes. This one is fun for kids, because they get to make their own mini pizzas.
Cook in oven until cheese is melted.
No Dough, No Problem; Chicken Crust Pizza
1 lb ground chicken (not turkey, we tried and it’s not the same 🤢)
1 8 oz container of powdered parmesan
1/2 tsp salt
Italian Seasoning to taste
Pizza Sauce
Mozzarella
Toppings of Choice
With pizza stone on center rack in a cold oven, preheat to 425 degrees F
Mix together chicken, parmesan and seasonings and then on a piece of parchment paper, shape out flat into a 12 inch circle or 10 in square. And transfer to oven and bake for 12-15 minutes until the internal temperature reaches 165 degrees F.
Remove from oven and add your sauce, cheese and toppings and place back into oven for an additional 7 minutes to melt the cheese.
We find 1 slice satisfactory with a side salad, so it serves 8
