Lunch is the bane of my existence. I find it challenging to come with ideas for lunches, especially ones we can take to work with us, but that are also not boring and are full of flavor.
We gave Cowboy Pasta Salad a try and it was so good! I had to share with you all in case you're like me and are desparate for a new lunch recipe:
INGREDIENTS:
1 lb bowtie (Farfalle) pasta
salt
1 lb ground beef
2 tsp. taco seasoning mix
black pepper
1/3c. avocado oil
3 Tbsp lime juice
1/2 tsp. ground cumin
15oz black beans (if canned, drain)
15oz corn (if canned, drain)
cherry tomatoes
2 c. shredded cheddar
4 green onions, sliced
INSTRUCTIONS:
Boil salted water in a large pot and cook pasta according to package instructions, drain and replace into pot
In a large skillet cook ground beef over medium-high heat, breaking it up with a spoon. Season with taco seasoning, salt and pepper. Cook until meat is browned and no longer pink. Drain excess fat.
In liquid measuring cup whisk oil, lime juice, and cumin. Season with salt and pepper. Pour over pasta and toss together.
Add ground beef, corn, beans and tomatoes to pasta and toss together. Fold in cheese and green onion
Serve warm or at room temp.
